The thing is, previewing them in the scrying workshop is very different from implementing lineage coding on same-sex dragons; right now it's coded so that if the dragon is female, they appear one place in the lineage coding, if the dragon is male, they appear in another. Even just on the breeding dropdown screen, it's currently coded that the dragons that appear on the dropdown list appear by sex. Changing that would require a rewrite of the breeding/lineage system.
The scrying workshop doesn't have to interact with any of that; it just takes colors and breed and genes, which is why you can do things like preview deity offspring and same-sex dragons that wouldn't work in the actual breeding system. To change that would in fact require some serious alterations, especially for a one-time item that would make things
temporarily different but wouldn't be permanent. I'm not a dev or a coding expert, and I can't guess at how easy or difficult those alterations would be: this is just a "there are actually coding restrictions that make that sort of item currently impossible unless major changes are made to the breeding system," statement, since it is pretty easy to conflate the scrying workshop with the breeding system but they're actually engaging with very different systems, as I understand it. The scrying workshop offspring preview is engaging with a much shallower mechanic: it doesn't do the five-generations check or worry about whether a dragon is male or female, etc.
Anyway, for OP's question, I have used surrogates in lore, I disregard offspring lists as canon, and now that I have the space I have dedicated fodder breeding pairs and don't breed any of my permas unless for some reason I'm out of fodder pairs (it's only happened once or twice). I do have older opposite-sex perma couples who I have bred and even kept offspring from, but they don't have kids in canon because that timeline is too much to keep track of and makes my head spin.
Also, weirdly, there are some dragons I'd be able to handle breeding, and then there are others who I've been asked to breed more than once and ended up refusing every time because I didn't want her to have an offspring list because it felt weird even though it wouldn't be canonical anyway. I mean, I have no idea what Roundabout's orientation is aside from "maybe accidentally dating his [male] best friend a bit," but sure, I can breed him with anybody I also feel comfy breeding! (Not that anyone would ask me to, because he's a fodder rescue.) Ditto his [not dating] friend Fissure who was his fodder breeding partner for a while; sure, don't really care. Viola and Sian? Sure, but only with each other even though nothing is canonical. Chrysanta? Her girlfriend could be male pose and I'd still not feel comfortable breeding them. Do I understand why I feel differently about any of those? Nope!

It can't be the presence of an already-existing offspring list alone, because there are dragons I own with an offspring list who I would not feel comfortable rebreeding.
Oh! Also, adoption for same-sex couples in lore is great. I did want one of my same-sex couples to have a kid, so they did: nothing in their offspring list, though, because I bought the kid off the AH, so no need to worry about surrogates or how the offspring list interacts with canon.
So in short: all my dragons with offspring lists, even the offspring I kept, none of that's canon. The time I wanted my dragons to have a kid I bought that kid off the AH even though I hatch a nest a day.
