honestly i'm kinda in this boat? not because i'm into the "purity" aesthetic - that honestly is beyond me too - but i just find white to be kinda ugly with most genes except iri. just from what i've seen, it sometimes looks like people treat it more like a status symbol? not sure if that's true or not, but i dunno, i only like white as a tert if it's not iri/shim usually

honestly, I'm not into most of genes in white. But I particularly like basic (I really want a white/white/x g1) because,,, clean? It's not for the "pure" aesthetic, it just looks really nice. And you can easily match the tert with apparel/accents.

It can be easy to work with and it never clashes. I actually have several triple white dragons for a subspecies. It's called Snow Leopards and it just makes them look like snow.

This right here is why I tend to go to Ice as my default "white" slate. Iridescent Ice gives you a nice cool off-white to play with.

I think there is only one valid answer and that's: taste
It appears that many people love the black n' white aesthetic or just simply like the White colour because it is not clashing, because it goes easily with many accents/skins and apparel, or just because people like that colour specifically. Taste - that's literally the reason why.
I for one have different tastes and would never allow a White dragon in my lair, let alone an XXX White or greyscale. I just don't like that, I like colours, but many other people love greyscales which is why it's popular.
Edit: wait, I played myself.... I do have a dragon with a White colour, a tertiary, but I still strongly dislike it which is why it will be tinted a little with a custom accent.
