Wow, so many amazing dragons. I'm impressed!
I've got some Assassin's Creed inspired fan dergs that I'm still perfecting while trying to make them their own thing. For them, I go for colours and genes I feel would match based on their clothing (or my favorite outfit(s), looking at you Evie) and personality or family lineage if available. I think my best example is inspired by Ethan Frye going off the description given from the book while still having fun with it.

Hmm as for me, usually I'll get an idea or scry around (and/or mess with the dressing room) and then not make the fandragon. XD For me, element is more important than eye color most of the time, so if I'm making, say, a Pikachu fandragon, it will not have Earth eyes (even though, for the most part, this would be more accurate since Pikachu usually have brown-type black eyes.) It will have Lightning eyes because Pikachu is an electric-type pokemon. Where element doesn't matter (like, if it's someone without elemental powers or has power over multiple elements or something) then I may try to match eye color. But I always design my fandragons before I look for them and I rarely veer from the design. At the very least, I have some non-negotiables (which usually manifest in the secondary color, but can also include other elements such as breed or the aforementioned element and, obviously, whether the dragon is male or female.)
I don't have too many fandragons, and some are more nods than true fandragons, and most are from the Fire Emblem video game series.
Here are some of my dedicated fandragons. None of the Shadows of Valentia ones are quite finished, and since Berkut and Rinea require gem genes, it may take a while for them to be complete. Alm needs his outfit, but it's in his bio. Ashe, ironically, is the most complete. He's one where I just wanted Common Wind eyes and a Silver Glimmer on a male dragon, and the primary and secondary had to be within reason. I threw together his outfit based on his school uniform without a reference, but I think it turned out pretty well. Oh, and Makoto on the end there is a Legend of Zelda: Ocarina of Time fandragon of the Nocturne of Shadow. He's a Shadow Nocturne with Shadow as all three of his colors.
As for how accurate they are, that depends on what you're measuring by, now doesn't it?

In another case, there's Firo (from Baccano!) that was a Gen 1 hatch that turned into a fandragon. SaltyGhost he's a very pretty dragon! Honestly I wish I had the patience for those long term projects but I get so excited over these dragons I just end up with the closest existing possibility ahah

Might not have 100% accurate colors but it certainly has that Xanxus vibe :) I don't really know much about Baccano but I think if you give python to that boy you might get a closer color? Python does tend to make light colors pretty dark so it might work!
