this might fully be me not understanding gene accents, but parts of my coatl being white look...not colored in properly, with the wings in particular looking very unfinished?

A good way to check these things is to look at other breed and gender combos. If you browse through, it becomes obvious that white is phthalo's accent colour in iridescent! Raspberry also has white as a common accent colour.

The top looks flat and missing some polishing unlike the bottom.
This is probably likely due to the fact that a) Iridescent is hand-colored and b) pure white (or close enough to it) was chosen for this part.
It's not the fact it's an accent color but the fact highlights appear to be missing.

As you can see in Naeryl's post, there is shading. You just can't highlight white. It's a minor quirk of an accent colour.
