I try not to care but I can't help it most of the time. Namely with my Inscryption fandragons - I only own 2 so far, but I have dozens of plans. Every fandragon has the same set of colours because they are made to match the colour palette of the game - orangey-yellow and black, like a more vibrant version of the Bendy and the Ink Machine colour palette.

I usually try to match the eye color with the one of the character/thing the dragon is based on, but with variation. If I'm breeding the dragon myself, I will make sure it matches the eye color I want. [url=Here is one of such dragons - he has Earth eyes because the character he is based on has brown eyes.
Sometimes, it's thematically more relevant for a character to be linked to a specific element, or the element offers something for its eyes options that the others don't. Primal is a great example - I don't have fandragons with it, but the options it offers are stuff you can't match by other means. Here's a fandragon I saw recently on IKTR that uses Light Primal as an integral part of the design. Before Dark type was a thing, there's several Plague dragons I got specifically because Plague Unusual was the darkest eye color in the game. As for thematical relevance let's say, if I am making the dragon based on a character with fire powers, it can feel more fitting to give it Fire eyes than eyes matching the canon color even without the use of eye types.
I've recently gotten into making fandragons from G1s instead of breeding/geneing them into existence and this limits my choices a lot. If the colors of a G1 match well what I want the eye color becomes a sort of "good enough" deal. Sometimes I get lucky and find the perfect match, sometimes I don't and go along anyway:)

Yes and no. If someone needs to have, say lightning magic, to be accurate, but the eyes don't match, I'll probably go with the magic over the eyes. However, if that doesn't matter, I usually stick with the eyes.
You get a lot of leeway with the eye update though, like, now that we can tint eyes I do that a lot. A brown eyed guy was light element and his eyes were too bright so i tinted it to rare. I've also used arcane rare a lot for the faint yellow tint on very noticeable pink eyes. It's nice and muted.

Also I don't do fandragons as much anymore but I do have OC dragons and man was it hard to find good dergs for them (I have breeding project PTSD so I wanted to just find them on the AH)

it really depends. 9 times out of 10 i really want the eyes to match as much as i possibly can, but i also understand the need to be realistic
if i can't buy the dragon with the exact colors i need (or as close as possible, i'm willing to be flexible) with the flight i need, the issue of a breeding project comes up and i'll be honest I DONT WANT TO because it'll require me to hand the dragons to another player, and i'm terrified i won't get them back (ESPECIALLY if the dragons in the right range available are already limited to begin with)

razputin has green eyes but the only dragon available in the colors i needed had earth, problem solved easily because raz wears goggles in the game so voila - no one has to know unless they look at his bio

with my doc holliday dragon, i wouldve gone with nature but i thought plague rare worked better because of the hints of green. i wanted it as a representation of his tuberculosis slowly making him sicker throughout the movie (soap also represents how insanely sweaty he is in that movie my god someone get val kilmer a towel)

only if the eyes are big enough for the color 2 be super visible. especially if the fandragon in question matters a lot to me (like....my avatar dragon Nightleap :-})
