Hi, I'm hoping to make ~1,000 gems off of a nest of three (XXYs) that I have that hatches soon. I want to do art for the babies, but I dont know how much art i need to do to get 350 gems out of each one. Could I get away with just doing a headshot or should I do a full-body piece? how much is art valued here?

So....bad news first.

While the "dragon with art" market exists...it's not much better than the dragon without art market and is harder to find a buyer for. Not only do you have to find someone who wants the dragon in the first place but is also willing to pay extra for the art.

If making money is your aim you're better off doing commissioned art for people.

As far as art prices go check out Art Sales. Art here runs from hangman quality stick figures to photo-realistic to gallery-quality with comparable prices. Compare what you do with what's out there and price accordingly.

If you do decide to sell dragons with art check out this thread for a link to a pinglists of buyers.

As a side note check out this guide to leveling dragons. You can reset stats with a Tincture of Dissolution.
