I'd want a cheetah. And I'd give that cheetah its own emotional support dog, like some zoos do.

Realistically a hyacinth macaw or an eclectus with the blue color mutation. owo!
If this is a sky is the limit scenario where there isn't anything ethically wrong with it, I'd probably want a wolf or any sort of hawk really.
