Maybe something like unexpected combinations, like having an undertide or guardian having a fire-theme, a snapper or obelisk having an wind theme, etc.

Another idea is showing off dragons that don't look like dragons (or are something else lore-wise on user created lore), due to apparel, skins, etc.
