(I mean, they're kind of normal guards and not guarding jails so they might not be sentry order after all)

Sakura and Jade are able to do this thing where they sit so still that they look like jade statues, meaning they can catch would-be infiltrators by surprise. It's somewhat similar to what obelisks do, except they can't actually turn into statues.
The duo's ability to sit still for so long makes them excellent guards. On top of that, while dragons would expect statues of obelisks to be real and wake up, nobody expects the gaoler inquisition people are less likely to suspect these statuesque gaolers to stop them.
Sakura is a little less efficient at this than Jade due to his fur colors, but he helps the disguise by mirroring Jade's position. One statue looks suspicious, two less so.

Quillan helped them import a cherry tree near Sakura's position- the goal is that it will help him blend in a little better, giving off the appearance that he is covered in fallen petals rather than being inexplicably pink.
