Dom Battle Timeline:
Depending on how much space you have hoard up L6-7 dragons and store in your HDen/Lair Wednesday or so before prices rise. Send out ready to breed out to nest rentals so that they return day 1-3. Don't bother training until Sunday unless you're aging up hatchlings in your Lair. Rest!
Sunday: Send all leveled dragons out the first day and start snatching up cheap hatchlings to go in the HDen. 4/5 day hatchlings and adults stay in the lair. Keep track of incoming breeding pairs so you have space!

Monday-Wednesday/Thursday: Accept returning adults and new hatchlings. Sell off the trained adults and store hatchlings. If your breeders are late and the hatchlings won't grow up by Saturday that's okay--those become cheap adults on Sunday when prices for exalts are still coming down in the AH.
Friday/Saturday: Train up the HDen hatchlings who are now adults. See those high AH prices? You never have to pay them unless you've got extra time to train.
Since I can hold about 350 dragons in my HDen and another 30 or so in my Lair I generally wait for exalt bonuses on dragons before sending them to OOF support or exalting myself. I either won't find the time to train that many or find that many to store and get to the last day. I also have enough lair space to hold current in/out dragons for each day.
Outside of dom battles I typically train anything from 20-80 dragons a day depending on the relative price of exalts in the AH. I have preset AH searches based on Sylvandyr's guide above for L5 vs. L6 exalts. Anything higher than that and I just grind lower venues for stuff to sell.
I tend to train in a big batch early in the day and then randomly later as I pick up cheap exalts in the AH. Outside of dom I exalt only dragons that have a bonus that day, are on HDen cooldown (don't want to them to take up Lair space) or are Ancients/Moderns with basic genes since they're less likely to get a bonus than a triple gened Modern.
As far as the whole L7 or higher that people like to exalt at? It's because the payout is almost always guaranteed to be 10k or more. Use the formula in Sylvandyr's guide. Optimal level is almost always L5.
Between raffle, fast-lane and merc orders I pulled a profit of just over 14 million treasure and nearly 2k gems. This includes subtracting food and cost of buying exalts throughout the week. Now I need to go spend a couple million filling my HDen again.
