Several times now i've started a breeding project with the goal to get a dragon that precisely matches a scry i've made, but it's always incredibly tempting to to "eh, good enough" as soon as I get a dragon with roughly the right colours. Anyone else?

I think it depends on how heavily accented the colors/genes are. For instance I'm working on a project that needs cobalt secondary. If the color is off by just one, it's no good, you lose the whole neon effect.
But with other colors/genes (e.g. something like metallic that doesn't vary too heavily between nearby colors) I could definitely see myself accepting a target range instead of needing a specific color.

I have a breeding project that NEEDS umber and ice for it to work. The other close colours are just off enough that it completely falls apart.

it really depends on the project for me, i definitely agree with the first commenter about accents since that can change up the whole vibe of a dragon. a lot of the time i’m doing a project to breed specific colors because they have specific accents i need in their genes. if the gene is just going to be basic, or its maybe a shade or two off, its usually easier for me to just call it good with one color off, especially if the parents range is wide or they’ve refused to give me what i need for years. it depends how committed to the exact looks for the project i am too. some dragons i can play around a bit with them; others i really need something extremely specific

Seconding Achais. Usually I'm extremely picky about wanting the exact colors, though a couple times I've settled for something close because the off colors were just as good. And it really comes down to accent colors and genes. Many of my scries involve matching specific accent colors that show up in specific genes so being off by even one color ruins it.
For example this girl would look very different if her prim or sec were different colors.

I typically don't make scries and then try to get the dragon, I've only done that a couple of times. I tend to just take dragons I have accessible to me and make them nice!
I had one breeding project that took... a year and a half? Which that was worth it because it was for an OC dragon.

And another was for a fodder snipe that I didn't grab but I fell in love and tried to recreate - I had to settle for a slightly off color tert, which meant I couldn't go with koi like the original had. So he's not "perfect" but I try not to think about the one that got away, haha. Still love him though!

if i start breeding for specific colours, i want those specific colours. genes and eyes and breeds are all customizable with scrolls, but colours rely solely on rng and i will bend rng to my will for a breeding project

I almost always go for xyz's with veeery specific accent colors, so unless any other colors fit just as well i kinda have to go through with the exact plan. It sure does take a painful amount of time (looks at my project tab with despair)

I feel like if you're making the effort to do a breeding project, you might as well go for the best! The idea of putting in all that effort just to get something I'm not 100% happy with isn't very appealing, so I haven't accepted anything other than my exact goal. I would be fine with something that's close enough to be practically equivalent, but I haven't been fortunate enough to have projects like that.
I feel like if you're making the effort to do a breeding project, you might as well go for the best! The idea of putting in all that effort just to get something I'm not 100% happy with isn't very appealing, so I haven't accepted anything other than my exact goal. Some "near misses" are basically the same as if they were the correct color. Sadly for me most of my projects won't do that so I have to wait for the exact color combos to came around. Thankfully I've been getting lucky but there will come a day where It will not
