I cant pick/type a number for how many to move when moving part of an item stack to/from my vault.
I've tried on firefox and safari on my computer and on mobile.

What items are you trying to move? Anything with a tickbox should let you set the number (and certainly does on Chrome). Anything unsellable (with the little button instead of a tickbox) can't have a specific number set... which is annoying, but there's nothing to suggest it's not intended behaviour.
It's one of the things I hope will change with the revamp!
