Materials like the 'other' category are mainly part of swipp trades and baldwin recipies. Bot can be found in the trading post.

Most materials are fairly useless (you can just sell them on the hoard page for cash), but some of them can be used in trades for rare items at Swipp's Swapp Stand, or brew recipes at Baldwin's Bubbling Brew. Some of these items sell for a lot on the Auction House because other players want them, so even if you aren't interested in the trade or brew, you can make some money by selling them there.
