I suggest starting by looking at her adult form in the Scrying Workshop and changing her Secondary Gene (mainly controls wings and hair for Gaolers).
Once you find a Gaoler gene you like you can buy it from other players or see if it's available through other means. You can check where to get things in the Game Database.
Once you've purchased the gene you want you go to the Specialty tab of your Hoard and click on it to get a pop-up where you can select vanitas and apply it.
