i'm not really familiar with sapwood blade, i don't think i've crafted it yet but from the sounds of it, it looks decent. it gives both ER and EM, and i can see it working well in a team with a dps who wants a lot of EM (e.g. on-field nahida)
i personally don't use her burst much so the ER stat isn't important for me and iron sting gives more EM, more consistently (though the downside of iron sting is that the passive isn't very useful for her). i guess it depends on energy recharge at the end of the day - if you think you need the ER, go with sapwood; if not, go with iron sting or another EM weapon. keep in mind that with triple EM, you'll still have plenty of EM anyway so i don't think it'd be a big loss.
