It must be an adult, which it reaches at 5 days. You can speed up the process by buying a scroll of Maturity from the Marketplace or the Auction House.

All the hatchlings from headstart are growing up. You might be able to pick up a full adult dragon from the auctionhouse meantime.
Sorry about the lack of adults. This is a launch problem and part of the games life cycle. The dragon population will multiply many times over as folks breed, then breed again. :-)
