Breeds don't matter given that you'll need a
Tincture of Dissolution to attain any of the more optimal builds.
As far as "champions" go for elements do you mean lore-wise or as a usable build? Lore-wise you can go with any of the elements listed below but build-wise it depends on if you're training or farming.
The Kelp Beds is the last venue a single dragon can be used as a trainer. After that you'll need a minimum of 2 dragons.
Current best element for KB is Plague. Ice, Water and Nature are fine assuming you add Reflect to Water/Nature dragons to protect against the bosses.
Current best for GW is Fire/Nature. Ice and Water are fine.
Current best for FP is Fire. Water, Arcane and Earth are also fine. Arcane/Earth will need Reflect for the bosses and it's really ideal if you have a trio for farming for all 3 to have reflect.

I second everything Nightwind said. My team is all ice and I find that they kick some major butt. They're weak to shadow and plague, but I don't run into those types of enemies often and I only run the 20-25 lvl venues. If you'd like some screenshots of how my dragons are set up I'd be happy to show you!

Here you are! Espera is my healer and when I level fodder, I use her and Cyzojir. If I use rally on CJ, then he can one-shot eliminate anything but bosses up to Mire, and a few things in the Kelp Beds/Workshop/Portal. Ice is great because with Espera's ice ability, there's a chance to freeze the opponent for a few turns. It's a life saver with bosses.
