I'm just really curious at this point, when a dragon reaches adulthood, does it stay one set length, weight, and wingspan? Or over time do they grow bigger?

Dragons grow until they are ready to breed for the first time. So 15 days for a Guardian, 25 for a Skydancer, ect... Then, they no longer grow.
Also, Nocturnes are currently bugged right now as in they will revert to their hatchling size if they get bred.
