I'll second whoever recommended Fruits Basket! I don't think people talk about it a lot, but I just finished it and it was super adorable and romantic.
onto the anime people haven't mentioned yet:
Kiznaiver is about a group of high school kids who are forced to become Kiznaivers, connected so that they share each other's pain. Each character has some sort of baggage or something that's bothering them. The anime shows how being Kiznaivers affects their everyday lives and what happens when they really get to know each other.
It's full of drama, emotion, and romance (at this point, the love triangles might be better called love hexagons). Kiznaiver is beautifully animated, fun, happy, sad, and touching. This show is absolutely packed with romantic tension, and if you're a fan of shipping characters I highly recommend this.

Kokoro Connect is another drama about high school students, except this time they have to deal with what happens when a godlike creature begins to mess with their lives. After the members of the Student Cultural Society club begin switching bodies, the group of friends gets sucked into a rollercoaster of supernatural phenomena and emotional trauma.
There is romance in Kokoro Connect, but its strong point is really the character drama. Unlike Kiznaiver, the characters already know each other, but they learn about each others' dark secrets and go through a lot together. It's a wild ride, but it's definitely worth it if you're in the mood for something wonderfully tear-inducing.

The next show I'm going to recommend is Mayoiga.
You're better off going into this one blind. It's...it's interesting, to say the least.

Re:Zero is a brutal show about a neet who gets transported into a fantasy world. It may not seem like a unique concept, but the way it's executed is what makes it so special. It's hard to say a lot about Re:Zero without spoiling much, but if you're into suspense, intrigue, and cute girls, check it out. But I will warn you, it does get gory at times.

To finish off my list with something more lighthearted, Tanaka-kun is Always Listless is a comedy about a perpetually tired high school student. There's no overarching plot, just fun episodic highjinks.
I absolutely adore this show! It's so cute and funny and relatable. The characters are all so unique and they mesh so well together. 10/10 would recommend
