Alright think the Golem Workshop list is pretty complete at 31 packs. Posting the charts, and can always update them again :)
Also added an appendix to the Boreal Woods tumblr to show the holiday packs discovered, not yet ready to make "limited time chance" charts but it's not out of the question.

Georgieanna What do 'mobs' mean? Because there aren't 94 different enemies in the Workshop.

WyvernVenom
Basically using it to mean units. If you were to fight every unique pack once, you would have killed 94 creatures.

Georgieanna: what dragons (elements) should I pit against an ice enemy and an earth enemy in the new zone? I'm slightly confused with the plus and minus system.

Pokemon
For the plus/minus refers only to magic attacks [bolts/slash/special], if you are farming with two physical damages and a healer the only thing you are really controlling is how much the enemies magic attacks deal to you. If you want to reduce incoming physical damage you'd have to spend stats on health or defense.
To read the chart, the column on the left represents the attack, regardless of if you mean your team or the enemy. So reading the earth row, you can see what it is strong and weak against. So an earth attack is weak against earth/air element creature/dragon and stronger against. lightning/arcane/fire dragon
Reading the other direction you can choose the target type and see what is strong or weak against it. So the earth column shows that an earth creature/dragon would take less damage from a magic earth/fire attack, and more from a wind/water/nature attack.
--
So for the example of the two big mobs in the Golem Workshop. Wind/Water/Nature would deal big magic damage to the Stone Borer, and Lightning/Shadow/Fire would deal big magic damage to the Frost Delver. If they cast any magic a Earth/Wind dragon would take less damage from the Stone Borer, and Ice/Shadow dragon would take less damage from the Frost Delver.
--
However due to the limited chance of encountering either, unless you're constantly refreshing to find one of the boss packs, you'd be best off building a team for general durability and survivability in the zone. This mostly means a healer is a great dragon to have along.

Alright, got some data collection to do on the new packs added to Kelp Beds, but been collecting data on the Mimics last week but been busy to tidy up that information fully yet.
Mimic Encounter Chances [the chance any given battle will have a Mimic]
Woodland Path: 11% - 5 packs out of 45
Scorched Forest: 23% - 10 packs out of 43
Waterway: 22% - 10 packs out of 45
Arena: 29% - 10 packs out of 34
Kelp Beds: 29% - 8 packs out of 28
Golem Workshop: 24% - 10 out of 41 packs
Feeling pretty confident of the packs, I could see Kelp Beds having less due to the overall less packs within.

Georgieanna - The mantas are boss mobs, there are two new packs in the Kelp Beds:
Mantarune (Ice)
Wave Sweeper (Plague)
They appear alone and are boss level stats as far as I can tell. Have run into about a dozen of them so far. :)

Made up some mini-charts for the holiday encounters, ideally next time the holiday comes around can wheel them out quicker with a "2014" note until any new encounters are discovered to add.
