Spotted the snapper nutcracker in Bamboo falls :)

Undertide Fidget Toy is in the Waterway! I can't tell what it dropped but it appeared with the Ghosthost Viola and Manticore's Might and all three dropped Flounder, Cuckoo, and the Grimoire. I'm assuming the Flounder is one of its drops as the Viola and Manticore do not drop it.

edit: CONFIRMED! Just got a three spawn of them and they dropped 2 flounder for me (:
edit 2: It also drops the Multi-Lens!

Didn't this guide have a chart showing which venues dropped which swap item so you could see which ones dropped both items needed? Will that be returning once you've collected the drop data for the new enemies?
