Save it to sell the first day of next year's festival. I make about 100 or 200g from it every fest and all it takes is a bit of patience lol

If I have a ton, I'll sell some before the fest ends, but otherwise I just vault it. The only exception is that one year I participated in a competition for who can grind/produce the most fest currency, and I still have a solid page and a half of embers sitting in my vault...
