It would seem that all of the monster's I've fought in the Coliseum are not unlocking in my Bestiary.
I've battled enough to get my 3 adults to level 6.
My familiar did however unlock.

The Bestiary is not a log of enemies, but Familiars. We will be adding a separate enemy-themed section in the future. :)
