Biography

ingredience: 3 eggs, 180g butter, 160g of dark melting chocolate(usually marketed as 'for melting or desserts' it needs to have a pretty high fat content or it wont melt right) 100g walnuts (without their shells), 90g flour, 140g sugar, a pinch of salt

1-melt the chocolate in a double boiler/water bath (to avoid burning it) along with the butter cut into pieces. preheat the oven to 200C
2-break the walnuts into chunks with a knife and lightly toast them in a pan with no oil
3- the recipe tells you to beat the eggs with the sugar. thats a lie and were not going to do that. the recipe might have forgotten that we dont want a brick but i have not (you could also add the yeast they maybe forgor to write in the recipe so they turn out more sponge cake-ish but ive never tried. mine turn out flat and thin but. thin brownies are better change my mind etc etc. sorry for the tangent)ANYWAYS.separate the eggs into whites and yolks and put the whites in a bowl in the fridge with the salt sprinkled on them. mix the sugar and the egg yolks with the molten chocolate and add the flour(sieved) and the walnuts. brown goop has been achieved. now take the whites out and whisk them till they form stiff peaks (youre gonna need an electric mixer of some sort).
5 butter/butter+flour/wrap in oven paper/whatever you do to help stuff not stick a rectangular baking mould
4-carefully add half the whites to the brown goop (in as big of a bowl as possible) and fold them in until theyre incorporated. do the same with the rest of the whipped egg whites until theres a homogenous lighter brown goop
5-lower the oven to 180C and put the goop in the mold. put it in the oven and bake for 20 minutes
6-take out, let it cool in the mold and eat
