K O M B U C H A
Despite being something of an acquired taste, there are several dedicated customers of the Tea Café who return time and time again for Kombucha's fizzy, sour drinks. He has a somewhat haphazard approach to brewing, often experimenting with different flavours and ingredients - sometimes with explosive results. When not tending to his beloved SCOBYs, Kombucha can be found by the waterfront collecting flotsam and jetsam, which he uses to make fanciful sculptures that, once complete, he's never quite sure what to do with. His close friends and family - and even some of his customers - have resigned themselves to receiving sculptures large and small as impromptu gifts.
