Well hello there! I'm the clan cook. I guess you could say I'm the heart of the clan, and the thing that ties these hunters and gatherers together. They wouldn't have anyone to make them a good meal if I weren't around! Ah yes, speaking of a good meal. You look like you could use one yourself. Sit yourself down, and I'll make you a fresh batch of my famous Chilly Chilli. I'll even tell you how to make it. |
First you got to start with a meat. Any meat will do but I like the salted game. Cut it up in bite sized chunks, which of course might differ depending on the dragon! I try to make them not too big for the large breeds and not to small for the small breeds. You throw that meat in a ripping hot skillet and get a good sear on it. Once it's seared, take it out and let it sit for now. Don't wash that skillet though! You'll want all that good fond to give some flavour to your chili. Now that you've got that in there, throw in a clove or two of chopped garlic. More's the merrier! Cook that up until it's nice and fragrant and becoming translucent. |
. |
. | Now the fun starts! Deglaze that skillet with a cup or so of chicken stock. Mind the steam! Stir it around and scrape up all that fond! And now we can start building the flavour profile of our chili. Best ingridient is chili paste that you made yourself, but if you can't get that, a bunch of chili powder will do just as nicely. Don't forget some salt, black pepper, cumin, paprika, oregano, a touch of molassas, and a bay leaf or two for good measure. Let that come up to a boil and let the flavours get to know each other, then add your meat chunks back in. |
Finally add in a bunch of Chilled Endamame. It's not Chilly Chili without those! We always have a ton of that sitting around. On it's own it doesn't taste like much but it makes a wonderful flavour vehicle for the chili! We're gonna cover the skillet now and let this all simmer around for about 20 minutes. Want to make sure your meat is all cooked through, especially if you're using fowl, and make sure the flavour has a chance to permeate everything and come together into a sauce. If it's not come together you can add a little corn starch. Grab some sauce, make a slurry, then throw it back in. That should thicken it right up! |
. |
Don't forget to pull out the bay leaves! Then the best part comes! It's all ready to eat! Throw it over spaghetti or just eat it out of a bowl, whatever you like. Now you eat up and enjoy that, you hear? And if you ever want more, just come on back and pay me a visit! |
