Sugar, spice, and everything to do with running a smuggling operation- wait. No, that's really what Zookar is all about. The Bogsneak may not look it, but he's as much a Shadow dragon as he is from Water, and there's more than a few tricks up his sleeve. The first thing Xander does after one of his secret missions is visit Zookar's lair, and it's not just because Xander missed his cooking. Nope, he's reporting back on where the valuable sources of elemental magic, which are key to create Icarus' magical devices, are coming from and what it would take to buy some. Oftentimes, dragons don't wish for such commodities as Behemoth sap and Pink Chalcedony to leave their region of origin, as they could be dangerous in the hands of non-Nature or non-Arcane dragons. So, in typical Shadow dragon fashion, Zookar found a loophole. While the beasts or dragons won't sell them to outsiders, they would sell them to a middleman within the region, who could pass the goods off to smugglers and then to him.
It was a strategy Zookar was forced to employ during his earlier years in the Tangled Wood, when a great battle for Shadow dominance over Light cut off the young Bogsneak's access to his ingredients. Light would only sell necessities such as vanilla extract and cinnamon to their own flight, which upset him greatly. He was not about to sit idly while his bakery went out of business just because of some war, so he recruited an old friend in the Sunbeam Ruins to bring him what he needed. Just like his bakery business, Zookar knows that the Schism's main source of income will dry up if Icarus doesn't have access to strong elemental magics, so he works hard to ensure that will never happen.
It still doesn't stop Zookar from making food for the entire clan, though, and his lair's right around the corner if you want a cookie. Or a dozen. The Bogsneak won't judge.
