Postmortem didn't have a fantastic start to life. Abducted from a nest as a baby, only to end up being killed in later in a Beastclan raid, only to be pulled out of the grave to serve in a necromancer's experiments...you can understand why after a certain point he's starting to get annoyed.

Unlike other Undead in the Carnivale, Postmortem is fully capable of expressing emotion and reasoning, though in his case the emotion he generally expresses is exasperation and impatience. He has no love for the living, tolerating their presence as much as he can but choosing to remain in the background, making sure that all of the tents are properly secured and that nobody is going anywhere they shouldn't.

A perk to being undead, of course, is the fact that Postmortem can shrug off any injury with nothing more but slight annoyance that it happened. His biggest disappointment with his situation is that it's hard to groom rotting scales. He also doesn't get tired, which has lead to a trend of many dragons giving him endless lists of chores they don't want to do, which adds to his dislike of living dragons.
