Biography

Kimura's namesake is Yasubei Kimura the creator of Anpan (Japanese sweet red bean bun).

During the Meiji period, Japan was becoming rapidly westernized and the samurai class was dissolved. Kimura losing his position as a Samurai took up a job as a baker. Kimura wanted to adapt western bread to Japanese tastes and found a way to raise dough using traditional sakadane liquid yeast then filled the bread with red bean paste inventing the popular anpan in 1875. It was an instant hit due to its traditional taste yet western influence and many varieties of anpan now exist.
