Anzac biscuits recipe
5.3oz Flour
3.2oz rolled oats
3oz dessicated coconut
3.5oz brown sugar
1.9oz caster sugar
4.4oz butter
0.1oz bicarbonate soda
1.35 fl oz golden syrup
1.35 fl oz water

Vegan Peach and Pecan Muffins
Ingredients:
3 cups whole wheat pastry flour
1 tablespoon ground cinnamon
1/4 teaspoon nutmeg
1 tablespoon baking soda
1 teaspoon salt
3/4 cup chopped raw pecans
1/2 cup canola oil
6 ounces nondairy yogurt or nondairy sour cream
1 teaspoon vanilla extract
2 tablespoons white distilled vinegar
1/2 cup granulated sugar
1 cup packed light brown sugar, divided
2 1/2 cups peeled, pitted, and chopped peaches
ground up pecans or walnuts for garnishing
Directions
Preheat oven to 400° F (200° C,or gas mark 6). Lightly grease 16 muffin cups or insert cupcake liners. In a large size bowl, mix flour, cinnamon, nutmeg, baking soda, and salt. Add pecans and stir.
In a separate bowl, mix oil, yogurt, vanilla, vinegar, granulated sugar, 3/4 cup brown sugar, and peaches. Stir the oil mixture into the flour mixture until just moist (Kat note: basically just until combined. If you overbeat the batter the muffins won't be as moist). Spoon into prepared muffin cups. Sprinkle remaining 1/4 cup brown sugar and finely ground pecans on top of each muffin.
Bake for 25 minutes, until a toothpick inserted into the center of a muffin comes out clean. Cool for 10 minutes before turning out muffins onto wire racks to cool completely. Tada!
Extra notes: Feel free to fudge the brown sugar ontop depending on how sweet you want it. You can go a little over 1/4 cup or a little under, it doesn't matter a lot. Also this recipe does called for fresh peaches because they do have a lot better taste compared to canned, but you can sub the fresh ones for a 15 ounce can of peaches as long as you drain, rinse and chop them since most canned peaches are literally sitting in sugary syrup. I hope this recipe works for you. ;-; It's not super complicated thankfully.

My Grandma's Sugar Cookies
1 1/2 Cups of Powdered Sugar
1 Cup (2 sticks) of Margarine, can be substituted for butter)
1 egg
1 teaspoon of vanilla extract
1/2 teaspoon almond extract
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Mix powdered sugar, margarine, egg, vanilla extract and almond extract. Mix in flour, baking soda, and cream of tartar. Cover and refrigerate for at least 2 hours. Heat oven to 375 degrees Fahrenheit. Roll some dough to 3/26" thick and cut into shapes.
Bake for 6 to 8 minutes. Cool and frost.
Frosting Recipe
2 cups powdered sugar
1/3 cups margarine
1 tsp vanilla extract
some milk
Cream margarine and vanilla, add sugar and milk to spreading consistency.
Great Chocolate chip cookies
¾ Cup butter flavored shortening
1 ¼ cup firmly packed brown sugar
2 tablespoons milk
1 tablespoon real vanilla
1 ¾ cups all purpose flour
¾ teaspoon baking soda
¼ teaspoon salt
1 cup chocolate chips
1 egg
Heat oven to 375 F. Combine shortening, brown sugar, milk, and vanilla in a large mixing bowl. Beat at medium speed until well blended. Beat in egg. Combine flour, salt, and baking soda. Mix into creamed mixture until just blended. Stir in chocolate chips. Drop dough by the teaspoonful, 3 inches apart onto a cookie sheet. Bake for 8-10 minutes for chewy cookies, or 11-13 minutes for crisp cookies. DO NOT OVERBAKE! Remove cookies and slide onto a cooling rack. Makes about 3 dozen.
