Biography
Lingcod is a greenling fish with mottled, brown/copper spots, a large head, and a voracious appetite. They are native to the pacific coasts of North America and span from Alaska all the way down to California. However, most are located near Washington state. They are nicknamed "Buckethead" fish due to their large mouths with 18 razor sharp teeth.
Lingcod are one of very few species of fish that have the possibility of blue-colored flesh. It's relatively rare, with only about 20% of lingcod possessing this trait. The cause of this blue flesh is unknown; many theorize that diet is the primary influencing factor, but other factors such as sex and location seem to be correlated in some studies.
When the fillets are cooked, the blue pigment is destroyed.
