Yogurt is one of the oldest produced foods in human history. Its exact age and origin are unknown, but some speculate that the invention of yogurt may span as far back as 5,000 B.C. in Mesopotamia. Yogurt is really an umbrella term for food produced with the bacterial fermentation of milk. There are many different varieties of yogurt cultures, depending on region and the type of milk used. Cows are the most common sources of milk, but other milks from water buffalo, goats, ewes, mares, camels, and yaks are used as well.

Yogurt is made by heating milk to around 85 °C (185 °F), letting it cool to around 45 °C (113 °F), mixing in bacterial cultures, then keeping it steady at around 30–45 °C (86–113 °F) for 4-12 hours. If the temperature is too high, it will produce curds and a lumpy, undesirable texture.

Countless civilizations have their own yogurt varieties. Tzatziki is a sauce popular in southeastern Europe and the Middle east, mixed with cucumbers, salt, olive oil, garlic, and herbs such as dill and mint. Dovga, the national dish of Azerbaijan, is a yogurt-based soup made with coriander, dill, mint, and rice.
