The way I used to do it was:
Mains - Sales - breeding pairs/hatchlings
Never had any trainers, but if I had I would have put trainers and their leveling fodder in their own tab!
You can also add additional tabs if you have other projects, like a pinkerlocke!

While a lot of my dragons do feature their own individual lore, I don’t have all of them following under one specific overall lore; so I just organize them in a color order because it’s so satisfying
(I’m in the process of moving my permas into the hibernal den right now if anyone’s curious)

currently my sorting is only half-organized, everything except for my permas is neatly sorted and my permas are just kinda thrown together lmao

- some permas that I'm keeping in my lair atm
- breeding pairs/groups, including project pairs
- oldies for sale
- unsorted
and I have one more lair tab that currently isn't in use

- permas
- scried projects
- unscried projects
- scrapped breeding project that needs to be rescried
- oldies for sale

generally I organize by breed type (aka separating moderns from ancients) and if they have a specific purpose like a breeding project or fodder/sales.

Generally pairs go together, with singles on the endcap. Other than that, I just try to organize in a pleasing and balanced way- it's not necessarily in rainbow order but I like having a variety, and I try to avoid putting the same breeds and genes next to each other.
