I've also had chocolate covered bacon and it wasn't as great as I expected. However I've had crumbled bacon on things like cupcakes or ice cream and THAT was awesome. Maybe try crumbled bacon on your chocolate truffles?!

A friend of mine bought some strips of it from Rocky Mountain Chocolate Factory a few months back and shared. I don't remember the details, I think it was pretty much just milk chocolate dipped bacon.
Maybe with more spices or whatever, it'd be better, but as it was, it was pretty much just chocolate + bacon.

Now, chocolate chip pancakes + bacon = topnotch.
I'm biased cause I really love truffles, though. I would probably save the bacon for maple bacon cakes. ^^

The Truffles are in the fridge cooling. The next time I make a chocolate desert, I'll make chocolate covered bacon, and if it passes the taste test of my picky friends, I'll share the recipe.
So, I made Alton's truffle recipe. Normally this makes about 30. I doubled the ingredients, and separated the batch out into three for separate flavors. I will have around 60, so about 20 of each flavoring below:

[*] Subbed Brandy measure with Deserrano liqueur. Real Cherries, pitted, puree'd, and juiced.

[*]Topped with pureed cherries and cherry glaze.
[*]Next time: double the cherry juice and puree, and add 50% more Deserrono.

[*] Mint Creme. 1/6 cup Cinnabon creamer, 2 teaspoons mint extract.

[*]Topped with glaze made with cinnabon creamer.
[*]Pure heaven. No changes.

[*]Expresso Dark. 2 teaspoon Vanilla extract, 1/6 cup expresso shot.

[*]Half will be topped with Chocolate shavings and coarse sea salt.
[*]Half will be rolled in Cocoa powder.
[*]No changes. Chocolate and expresso *melts*. My favorite when tasting.

Once hardened, they actually turned out perfectly! I wouldn't even double the cherries, though I would prob swap out the juice for more puree.
By the time I got to the mint ones, I had improved vastly at dipping them in the chocolate. I was worried about the outer shell not hardening properly, but it turned out perfectly as well. :D
In the end, about 60 of them made it home. 30 of them gone. So, success!
