Definitely not into anime enough to be considered any sort of expert, but I have seen enough of them to have a few recommendations.

• Agreeing with Warrior on the Wolf's Rain rec.
• Bokurano
• Spice and Wolf (what, two wolves on one list)
• Madoka Magica

Not exactly sure what your gore tolerance is, but if you can handle rather graphic deaths, Deadman Wonderland is worth a watch.
