Don't know if this has been done yet, BUT
I just figured that since "site art" is what's used to decide if a skin will pass or not, there should be a compilation of all official art that includes "gore" so players(like myself) don't have to search the database themselves for examples.
So, if you want to include blood, wounds, or parasites/growth into your skin, you can control-f what you want to draw and find site art examples to replicate or take inspiration from.
This isn't a comprehensive list, and I'll be on the lookout for more examples. Feel free to say if I missed any.

Note about The Scarred Wasteland
While Plague's domain is site art, a lot of the "gore" there is just the ground. Bones are coming up out of dirt (fleshy dirt, but dirt nonetheless), entrails are roots, sinew is just fungus, etc. Even in a worst case scenario, the ground with real bones, entrails, and sinew can't "suffer" because it's not really "alive." I think this is a great resource for skinmakers and I'm actually surprised this hasn't been thought of before.
If I may make a suggestion, I think adding in the Previous Riot of rot skin winners would also give a lot of insight into what sort of ideas/themes are acceptable.
all of the previous riot of rot skins can be found Here. Most of them fit into your categories already, with either Growths, blood, injury, or parasites. Perhaps an additional category could be Exposed bones?
Edit:
Also With the Veterans scars, there's also the Darkened scars, which i guess are old wounds?

Honestly I don't think using food items is all that helpful; in the Cut Skin and Accent Makers Some Slack thread in the suggestions forum (thread's locked now, but there's still some useful insight) someone made a good point that there's a difference between a food item of a rack of ribs on an already dead animal, and exposed ribs on one that's still alive.

Lorem.....
The red on the Blue Bill specifically is supposed to be a deflated throat sac, not a pool of blood I think--
Otherwise excellent resource! Hopefully very useful.

Good idea. Lets not forget the official plague art such as their scenes and nests.

I vaguely remember Plaguelings background art to be pretty body horror as welll, but I can't find it atm.
Adding a link to all the previous festival skins, but I won't be adding skins to the guide. Unfortunately, there's just too much inconsistency: skins pre-2016 were allowed to be way more graphic then they are now, and UMAs are judged on a case by case, possibly even mod by mod basis. A skin that's accepted and a skin that's rejected can, and in some cases, have, been virtually identical.
I'll slap in the other scars, and I am thinking of adding an Exposed Bone category for the Nochnyr and the like.
It is a throat sac- and the extremity of calling it blood is the point. All the items on this guide are interpreted worst case. So for example, if you have something in your skin design that you fear looks too much like blood, you can use the Blue Bill as a precedent for "art that looks like blood out of context, but isn't" being allowed on site. It might not sway the skin mods, but who knows?
