Nope, what color of [insert transmutation material name here] you get is entirely random. The type of transmutation material is set, however. You get Goo from food, Ooze from stuff in the Materials tab of your Hoard, Sludge from "Other", Slime from Apparel, and Muck from Familiars.
It is completely random what color will come out of Transmutation. There is no way of knowing.
Only the kind of stuff that you are getting is based on the item.
Sludge for Items of the "other" category for example.

Colour is random but some are more common than others. Green is the most likely outcome so you shouldn't have too much trouble getting some.

Explanation: the only correct way to use Baldwin is to constantly transmute a bit of everything (rarity really doesn't matter, coli drops you have multiple stacks off are perfect)whenever you're not using it to brew items. That's the only way to increase chances of already having whatever you need on hand.
Most people will tell you to never rebrew one color material into another but Imo - if it's a time limited event with retiring stuff, green ooze prices are skyrocketing and you don't have time to brew throught countless orange and purple oozes you really don't need now - it's fine to rebrew few yellow oozes down.
