Heckin Amazing Carrot Banana Muffins

4 cups almond flour
2 tsp baking soda
2 tsp sea salt
2 Tbsp cinnamon
2 cups dates, pitted
6 ripe bananas
6 medium eggs
2 tsp apple cider vinegar
1/2 cup coconut oil
3 cups carrots, shredded
1 1/2 cups walnuts, finely chopped

0.1 - get out all ingredients. Shave carrots.
0.2 - In a food processor, shred the walnuts, then carrots. They can mix. Set aside.

1. Preheat oven to 350 F
2. In a small bowl, combine almond flour, baking soda, salt, and cinnamon. Set aside.
3. In a food processor, combine dates, bananas, eggs, apple cider vinegar, and coconut oil.
4. Transfer both mixtures to a large bowl and blend until completely combined.
5. Fold in carrots and walnuts.
6. Spoon mixture into paper-lined muffin tins. Note: you can also lightly grease the muffin tins with coconut oil instead of using paper liners. (Also note: making this decision will usually result in half your muffins stuck embedded in your muffin tray)
7. Bake at 350 F for 25 minutes
8. Let cool before removing from pan. Serve warm or cold.

These muffins freeze well and thaw quickly!
