Dove is more cryptid than resident of the castle. They live somewhere in the (newly repurposed) dungeons, creating trinkets with more-or-less unknown effects that appear upstairs in the gallery once complete.
If you must talk to them, follow the strange burning smells through the corridors. There's a fifty-fifty chance it will lead you to their lab or to the kitchens.
