started life as a fae
my recipes are real wiggly, but these cookies come out pretty good when i toss em together.
-1). In one container, "cream together" 1 cup of softened butter, 1 cup of sugar, 1 or 2 eggs, a splash of vanilla (around ~1 teaspoon), and a pinch of salt (around ~½ tsp).
-2). In a separate container, "incorporate" baking soda into flour. If you used 1 egg in the other bowl, you'll want at least ½ tsp of baking soda combined with at least 2 cups of flour. If you used 2 eggs in the other bowl, you'll want at least 1 tsp of baking soda with at least 3 cups of flour. (i use gluten free 1:1 baking mix so i don't have to mess around with the xanthan gum or whatever. this is supposed to be a precise science but i am a chaos creature in the kitchen.)
- Once your baking soda & flour are combined, hand-mix that bit by bit into the bowl of wet ingredients from step one. (Too sticky? add more flour)
When ready, evenly hand-press dough (¼ inch thick) into your chilled & ungreased baking sheet.
Optionally, top with a dusting of sugar, then bake!
After baking, let sit for ~5 min before cutting into squares, then serve :)
