I can't remember what article or blog it was or whatever, but apparently the REASON for all this mid-century badness was that it was only after WWII that refrigeration and a lot of mass marketed convenience foods were around (such as everyone's favorites; gelatin, and Miracle Whip!) as well as the end to food shortages etc.
This allowed people to experiment in quantity where they never could before, and uh, it just took them a couple of decades to figure out what actually looked and tasted good.

Taking out the peaches and mayonnaise, the cheese-horseradish mixture (plus proper mustard) might be nice used as a stuffing for beef or something.
