Spinach is a leafy vegetable that originated in what would be known as ancient Persia, in middle and western Asia, around 2,000 years ago. It was introduced to China around 647 AD, and to this day, China remains the world's leading producer, responsible for 90% of the world's spinach production in 2018.

Spinach is rich in Vitamin A, Vitamin C, Vitamin K, iron, and fiber. It can be eaten raw, boiled, steamed, and preserved in a wide variety of ways.

Historically, people have known of spinach and its health benefits for a very long time, and it wasn't always just a yummy, leafy green. We have conclusive proof that early physicians explored spinach for potential medicinal properties. Abū Bakr al-Rāzī, also known by the latin name Rhasis, was a Persian physician, philosopher and alchemist who lived during the Islamic Golden Age in the 10th century. He mentioned spinach in some of his publications. In World War I, wine fortified with spinach was given to injured French soldiers.
