I always liked the many headed dragon from the HTTYD books. I forgot their breed name but their heads are like Innocence, Patience, and Arrogance. I also really liked the nanodragons from the books too, specifically their king.
Also Saphira and Thorn from Eragon! I’ve always liked how that series characterizes the dragons.

Tiamat from dnd. I love multiheaded dragons and animal god-like characters. Also she's evil just to be evil which is fun.
King Ghidorah is another fav... and all the multiheaded httyd dragons. I enjoy most of httyd dragons and their bird inspired behaviors.

Falkor from The Neverending Story! I adore characters with his kind of personality, and the way he works, and the fact that such a character is a long, furry, floating dragon!
Manda from the Godzilla franchise is a close second, but I think that's more for nostalgia than content of character (which is little to none). But Manda was my introduction to dragons in media, so he's very special to me :)
