If I just had to choose one, maybe Inuyasha? It was the first anime I had ever watched and holds so much nostalgia for me.
Other honorable mentions include Mushi-shi, One-Punch Man, FLCL, and Chobits :D There are so many more that I enjoy but I'll just go with these for now lol

Tiger & Bunny. Favourite superhero media by far, really captured everything I like about comic books. Also the cast is super enjoyable, there's no heterosexual explanation for the relationship the two leads have, and it blew my mind at the time that the protagonist was a middle-aged widowed father.

Slayers, it has fantasy and comedy. It's a bit older but it remains my favorite. Gurren Lagann comes second probably but it's hard to pick I like so many. Trigun should also get a mention.
