so i accidentally gave my dragons the wrong stats (statted them and then gave them berserkers, instead of the other way round).
is there any difference between tincturing them now and tincturing them when they hit lvl 25 if i don't use the points for anything once i have the correct stats?
and if so, would there be any way to fix or come close to fixing their stats without using a tincture of dissolution?

It depends on what you statted your dragons to and what build you intend for them to have. If STR or QCK are now higher than your final L25 stats for their builds you will absolutely need to tincture them.
If STR or QCK are equal to or lower than your final build you're good to go; just stop adding points to STR or QCK until you even out the stats you need. I'm assuming that the dragons in question are not being trained with a trainer dragon.

here's what their stats look like right now:

i'm training them myself using culex's guide. my current plan is to have at least one of them be a 119 str mire flyer (probably dante) but the other two i'm not so sure about quite yet. (if you have any suggestions, those are welcome as well!)

At any rate, you did the smart thing and named your files after the dragons in question so I was able to look there.
Right now, assuming they all have Eliminate (or at least one of them does) I'd suggest these builds:
Dante:
Current Mire Flyer Build of 119 STR/64 QCK/30 VIT. Arcane is still the best element for this venue and you can level him up using Culex's guide. The next time you have stat points add at least 4 to VIT and dump the rest in STR.
James: Plague is good for a
Crystal Pools Trainer. Again, dump 4 points into VIT and continue bumping up STR.
Zarelle: Shadow is good for a
Harpys Roost build. Same 4 points to VIT and the rest to STR.
However, you only really need 1 double fodder trainer. I personally recommend the Mire Flyer (fastest for L6+) and the other two I'd suggest the
133 STR grind build. All 3 will need Eliminates but the return on investment is silly fast. 200g is about 2 hours of leveling/exalting fodder and hoardselling drops in the Mire.
Stat-wise it's just easier to keep their stats the same as you level up so you're not constantly doing the math and keeping track of who has hit with what to determine the who should hit next. Since all the builds mentioned and linked to in the Maki's guide all need tinctures you can tincture now or later but I'd say tincture at the end so that you'll be looking at the final stats and so that you're not doing the math for hits when Dante hits 119 STR and won't need more points in STR while the other two do.
