I noticed there hadn't been a thread for this yet. You have the classics.
After Man and its semi-adaptation
The Future is Wild. Wayne Barlowe's
Expedition/
Alien Planet. Or maybe you've encountered newer Internet-based projects like Biblaridion's
Alien Biospheres, C.M. Kosemen's
Snaiad alien world and book
All Tomorrows, or my personal favorite (to the point of namesake), Dylan Bajda's
Serina: A Natural History of the World of Birds.
Which ones have you read/seen? I may or may not have fandragon scries for many creatures from these, including a bunch from Serina that I made tonight if anyone wants to see them...

Just checked out the bird ones! I do find this sort of thing fascinating- my personal world project has a lot of this. It's not written up enough for me to post it here, but the general gist of it is a type of fantasy-world setting where the majority of sentient species have six limbs (four legs, two wings) without being actual dragons.

I have a vague memory of some sort of speculative evolution mockumentary where giant squids evolve to walk on land.
There was also a bit about giant man o' war or jellyfish type creatures....
Every now and again I think of it,
but I can't remember the name and if any of y'all know what the heck I'm talking about please let me know.
