My mom loves that but I generally don't like mustard so I don't typically put mustard on my grilled cheese.
If she can get ahold of stone ground mustard my mom loves it even more.

Coming from a childhood where grilled cheese was made with American cheese that came in a square foil-wrapped log, plain yellow mustard was how you made a grilled cheese sandwich. It added an acid bite to cut through the fat.
What do you do if you don't do mustard? I see all these rejections but no alternatives.

Usually we put nothing but cheese on ours, but we use cheddar. If we want to be fancy, we put tomatoes or ketchup on it. (Ketchup's a little too sweet sometimes though.) And if we're being super extra fancy, sriracha.
Edit: And like the poster below me, butter.

When I do a grilled cheese I typically use whole wheat bread and cheddar cheese, plus butter as lubricant instead of like, Pam Cooking Spray. then it gets grilled until it is very brown and crispy and the cheese is all melty.
So I get the flavor from the cheese and the crispy rather than the mustard.
