Initial searches don't show that anyone has a list of what does work in BBCode, so I could just use my best judgement and compile a list of symbols that would work well for this specific purpose - and see what works?

Unless you're looking for just one symbol to use! Not sure how you could make a long list of optional symbols to use in such a compact space.
Perhaps just a small number - say, ten or fifteen at most - of glyphs to choose from?
