I used to keep a fair backlog of food converted just from gathering every day, but now since i've started buying fodder dragons for dominance, it seems im using all of my gathering turns just to keep up with the demand for food, and not really accumulating a backlog. How do people with food hoards in the thousands do it?

My gathering turns usually can feed all my dragons but if I miss a day I'm screwed. When that happens I jump in the coliseum for a few hours and it gets back up in the thousands pretty quick.
Coli is basically the supermarket.

Coliseum! I have around 6k food of every category from purely converting coli food :D The food fests help a lot with it too! I rarely ever use my gathering turns for food now unless it is for trying to get a rare item!
Right now I'm looking for giant darners so I probably will be getting bugs for the next few months =w=

coli grinding, I usually go to the easiest ones and send 1 dragon, he flies through and gets some quick snacks for the clan
LOTS of coli. Currently have 40k of each food point converted and 32 pages (or 68 with virtual stacks turned off) of food in my hoard
Yup yup coli grinding is the best way to get food :D
We don't bother feeding exalt fodder wherever possible. Most of the time we buy then train and exalt the same day. If we're storing them for later then we try to buy ones with no hibernal den cooldown so we can train them and store them until we're ready :D

Coli grinding. Just levelling my exalts every day brings in more than my dragons could eat in months.
i have a fairly small lair, but coli grinding is the way to go!!
( Level up your dragons to level 25- or buy em like that! Its a worthwhile investment!)
