Right now, as others have said, expanding the lair is, at times, both a very successful treasure sink and a very inefficient one.
When the lair is small and it doesn't take a lot to expand, it is a very successful one. However, when the lair gets larger, and gets into the hundred of thousands of treasure, it starts becoming inefficient. Players are less likely to save up a lump sum that could buy them several genes, be able to convert to gems for that nice little familiar they have been eyeing in the MP, or buy all of the current festival skins several times over. Thus, they are likely to say 'I have enough slots' and not bother expanding.
This means less treasure is being taken out of the system, which is something the doesn't need. It needs more treasure being taken out.
Roundsey is a decent sink, but since most players have come to realize you have very little chance of actually winning unless you spend more than most of the prizes are worth (sometimes more than the entire selection of prizes are worth) , she isn't as effective. (still pretty good across all users)
By allowing users to stick random amounts of treasure in, treasure that cannot be gotten back even if the user changes their mind, lair expansions can continue being an effective treasure sink, even when users don't pay the entire sum at once. Users are also more likely to keep expanding when they can put 'down payments' or have 'payment plans' on the next expansion instead of having to save up the lump sum. I know I would be more likely to, though my problem isn't really spending the treasure but simply earning it.
Even doing it 1 space at a time can become discouraging when users work out that one space is still in the hundreds of thousands of gold (believe someone said the cut off was something like 2 million treasure for max lair? or just under? Divide that by five, and it can be even more daunting to think that one lair space is 400,000 treasure. Enough for potentially 2 treasure genes or a full set of discounted festival skins. And that only allows you to buy one more dragon)
